Ingredients: 

4 large lion's mane mushrooms 

2 tablespoons olive oil 

Salt and pepper to taste 

1 teaspoon garlic powder 

1 tablespoon soy sauce 

Instructions: 

Preheat your grill or skillet over medium heat. 

Brush each mushroom with olive oil and season with salt, pepper, and garlic powder. 

Grill or sear the mushrooms for about 4-5 minutes on each side, until golden and tender. 

Drizzle soy sauce over the mushrooms in the last minute of cooking.

  1. Lion's Mane Mushroom Risotto 

Ingredients: 

1 cup Arborio rice 

4 cups vegetable broth, warmed 

1 onion, finely chopped 

2 cups lion's mane mushrooms, chopped 

1/2 cup white wine 

2 tablespoons butter 

1/2 cup grated Parmesan cheese 

Salt and pepper to taste 

1 tablespoon olive oil 

Instructions: 

In a large pan, heat olive oil over medium heat. Add onion and cook until translucent. 

Add the chopped lion's mane mushrooms and cook until they start to soften. 

Stir in the Arborio rice and let it toast for a minute. 

Pour in the white wine and let it absorb into the rice. 

Gradually add warm broth one ladle at a time, stirring constantly until the liquid is absorbed before adding the next ladle. 

Once all the broth is absorbed and the rice is creamy, stir in butter and Parmesan. Season with salt and pepper. 

Serve warm.

  1. Lion's Mane Mushroom Soup 

Ingredients: 

2 tablespoons butter 

1 onion, chopped 

2 garlic cloves, minced 

1 carrot, chopped 

1 stalk celery, chopped 

4 cups chopped lion's mane mushrooms 

4 cups vegetable broth 

1 cup heavy cream 

Salt and pepper to taste 

Fresh herbs for garnish (optional) 

Instructions: 

In a large pot, melt butter over medium heat. Add onion, garlic, carrot, and celery and sauté until softened. 

Add the chopped lion's mane mushrooms and cook until they are golden. 

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes. 

Puree the soup with an immersion blender until smooth. 

Stir in heavy cream and heat through. Season with salt and pepper. 

Serve hot, garnished with fresh herbs if desired.

Oyster Mushroom Recipes 

  1. Blue Oyster Mushroom Stir-Fry 

Ingredients: 

2 cups blue oyster mushrooms, torn into strips 

1 bell pepper, sliced 

1 carrot, julienned 

1 onion, sliced 

2 tablespoons soy sauce 

1 tablespoon oyster sauce 

1 teaspoon sesame oil 

1 clove garlic, minced 

Fresh ginger, a small piece, finely chopped 

Instructions: 

Heat sesame oil in a large skillet or wok over medium-high heat. 

Add garlic and ginger, sauté for about 30 seconds until fragrant. 

Add onion, bell pepper, and carrot. Stir-fry for 2-3 minutes until they start to soften. 

Add the blue oyster mushrooms and continue to stir-fry for another 5-7 minutes until the mushrooms are cooked and vegetables are tender. 

Stir in soy sauce and oyster sauce, cook for another minute to coat everything evenly.

Ingredients: 

2 cups pink oyster mushrooms, shredded
